grilled artichoke and quinoa lettuce wraps

It must be spring because I am getting a ton of artichokes in my produce box.

There are many ways to prepare artichokes including steaming, boiling, braising, roasting and grilling. The simplest is to cook them and peel off the leaves, dipping them in warm vegan Hollandaise sauce, the method preferred over all others by the Dever clan. I don't really argue with them since this requires the least prep work on my part.

For better or worse, my box has been so laden with fresh artichokes that we have finally reached the limit of the simple way to eat them; no longer will dipping the leaves and the artichoke hearts in a sauce suffice. The family needed something different.

Here is a good tutorial on how to clean artichokes. After you clean them of the choke, boil them and grill them, as directed in the recipe. If you don't have an abundance of fresh artichokes, don't have the time or the patience to clean them yourself, but you'd still like to make this otherwise fast recipe, use jarred artichoke hearts. I won't tell.

This wrap is made with quinoa, spring onions (or scallions) and lemons, all within the spring theme. If you want to know how to cook quinoa perfectly (and not have to use a microwave ;), it is all spelled out in my upcoming cookbook, Everyday Vegan Eats.

indonesian stir-fried noodles + "one-dish vegan" winner

It was my youngest daughter’s birthday yesterday – she turned 14. She likes to think that now she is officially a teenager, as 13 was just too close to being a “tween.” She requested a strawberry-lemonade birthday cake for her party and a spaghetti bar, complete with vegan meatballs and homemade sauce. She got all three.

Since her birthday week menu officially ended yesterday, having consisted of "healthful" fare such as vegan pups in a blanket, pizza, vegan broccoli cheese soup (this actually being the better of her choices!), vegan shamrock shake and other cookies and sweets, I decided to make something for lunch today that was full of veggies, as it was woefully lacking this past week.

For lunch today we had Indonesian Stir-Fried Noodles with baby kale, cabbage and broccoli. A very fast and easy dish to toss together in under 30 minutes even if you have to cook the pasta first; just chop the veggies while the water boils.




On a separate note, I have recently discovered vegan recipe parties that a few blogs are hosting and since this was a delicious, easy and healthy meal, I have decided to enter this recipe. back to basics - stuffed shells

Stuffed shells are scrumptious. A creamy filling inside tender pasta swimming in a sea of tomato sauce and baked with plenty of vegan cheese. My family loves stuffed shells but the process can seem overwhelming. I believe that is mainly because stuffing of the shells can be overwhelming - it can be messy and time consuming.

Here is the easiest way to make them, by following the directions below. Use your favorite tomato sauce recipe (or brand), your favorite tofu or nut ricotta recipe and mix a blend of vegan cheese for optimal melting ability.

The Process:


Step 1. Spread your tomato sauce on the bottom of a casserole pan. Arrange the COOKED shells on the tomato sauce.


Step 2. Place the filling inside a zip top bag, twist the bag and snip one corner, about 1-inch across. The opening should be large enough to squeeze out enough filling to fill the shells.


Step 3. Fill the shells using your homemade piping bag.  



Step 4. Sprinkle with the vegan cheese blend, cover the pan with foil to melt the cheese. Bake in a 400-degree oven for about 15 minutes, uncover and bake for 5 more minutes.

FNF - slow roasted pork with coconut curry and fresh slasa



Food Network Friday

This month's Food Network Friday, hosted by Tamasin Noyes of Vegan Appetite, American Vegan Kitchen, Grills Gone Vegan (soon) and another surprise coming up next post, is Slow Roasted Pork with Coconut Curry Sauce, Corn Tortillas, Fresh Tomato Salsa over Basmati Rice.  Try saying that ten times!

Once you read over the recipe, you will note that at the end the disclaimer tells us that this is a restaurant recipe that has been readjusted to the home cook and that they take no responsibility for the quantities specified in said recipe, so don't blame them. Seven pounds of pork butt and 50 ounces of coconut milk sent up red flags. Nevertheless, I persevered and calculated how much TVP I would need to substitute said pork butt. Why anyone would want to cook the rear of anyone else is beyond me. Anyway, according to my Dixie Diners' instructions, 1 pound of Chicken (Not!) makes 3.5 pounds of meat. Not pig, I know, but neither is it chicken. Therefore, I would need 2 pounds of TVP to replace the 7 pounds of meat. Adjust for fat, and perhaps we are talking 5 pounds of meat. Maybe less.

In any case, to make the same amount of protein that the recipe calls for, I wound have needed to cook EIGHT cups of dry TVP. First off, we are not feeding an army or extended family overstaying their welcome, second, the cost would be outlandish. No thanks. I used 3 cups of Dixie's Chicken(Not!) to rehydrate to 2 pounds of the equivalent in meat. This amount was more reasonable for a family of five.

The funny thing is, I did use the 50 ounces of coconut milk because the recipe didn't cut the milk with any broth or water and I didn't want to lose any 'authenticity.' I didn't even cut the massive 1/4c of sesame oil it called for. I have hardly ever used more than a tablespoon of the stuff since it is so strong. Now that I have been your tester, you may very securely lessen the overage. It is intense. 

After rehydrating the TVP, I ripped each individual 2" piece apart by hand, to mimic the pulling. I braised, as suggested, the pieces in the 50 ounces (about 4 cans) of coconut milk, used a massive amount of curry paste (around 2/3 cup) and did not balk at the 5 tablespoons of minced garlic. The ginger is where I drew the line and took only a 2 inch piece and sliced it thick. I have my limits.

I braised the stuff for 2 hours, during which time the TVP softened considerably, the sauce thickened and the flavors were great. 

As for reviews from the family, they were mixed:
"I don't like coconut. I'm not hungry"
"This tastes just like Panang."
"I don't like this."
"This is nothing like Panang, except that they both have coconut milk."
"Boys, don't fight!" (Directed at Dad and Son by Mom.)

Now is where the recipe gets interesting! 
On top of all this, make a fresh jalapeno salsa (huh?) and roll it all up in a corn tortilla. Did we detour to Mexico? Sound like one of those challenges on the Next Food Network Star where they had to fuse the foods of two ethnicities that had gone very wrong? ... it could have been, but strangely... it was...good. Maybe all the coconut fumes got to me, but if you wrap it all up in the tortilla, it is bueno.

(Before I forget, that salsa was enough to feed a restaurant!)

VEG-Aside: 
We have moved! In blog, in life, in location, in most everything! 

Over the past month our family has moved to a new house and as anyone who has ever moved before knows that, it, well, sucks, ...as good as it is. It is like Spring cleaning, but you have no choice. It is amazing how much stuff accumulates in less than a few years. If you don't move much, I encourage you to purge every Spring and Fall - great times to clean your house and yourself.

The new (home)school year is starting and I have two teens in college! They are very excited - one is taking Japanese and the other Japanese and English. They are 14 and 16 respectively. Yes, I am proud of them, but it is important for everyone to know that your high schooler can take college credit courses - don't make them wait if they don't have to; it is a wonderful, encouraging and self-satisfying reaffirmation of themselves. Great confidence booster!

The blog has had a face-lift because I want to emphasize that there is a new turn of events. I have noticed my lack of drive, lack of time and lack of direction over the past few months. There are many recipes I want to put out here, especially my revised seitan recipes. Overall, a new time for it all. 

Since my kids have adopted a college, it is my turn to Adopt A College as well, and you should too! I will be leafleting while they are in class and hope that you will jump on the college-train, too~ if you would like to join me, just email me.

FNF - koftas with pomegranate glaze and indian potatoes

Our next challenge for Tami's Food Network Friday is Aarti's Ground Lamb Kofta Kebabas with Pomegranate Glaze. If you haven't jumped on the FNF wagon, you should give them a try - they are loads of fun!

Making vegan ground meat concoctions gluten-free can be a challenge because I love to use vital wheat gluten to bind the mixture. Aarti's recipe is basically ground lamb meat-lollipops. She glazes them with pomegranate molasses and grills them. Her accompaniment is a mashed potato cake with Indian spices. 

Since we are in the middle of a move and have a gluten-sensitive daughter, I needed to make this dish simple and without seitan. I made a mushroom-nut-black-eyed-pea mixture for the lamb kebabas.  All I needed to do was saute the mushrooms with onion, nuts and garlic, deglazed it with Marsala wine and added loads of fresh herbs. Since we are leaving a huge garden behind, this recipe received a bunch of those herbs: basil, mint, parsley, oregano. I then roasted the kebab-balls glazed with the pomegranate molasses.

I skipped the riata completely but subbed a Fig-Pomegranate Salad.

These alterations were the simplest way to convert this dish to fast and gluten-free. This is our interpretation of Aarti, who is herself interpreting Indian. 

This worked out very well and we enjoyed the dish. The kids found the potatoes the tastiest. I toasted some fenugreek seeds, cumin seeds, mustard seeds, coriander seeds, and garlic in a few tablespoons of oil. I then added some smoked paprika and tossed it with the potatoes. I roasted them and the kids gobbled them all up.

A hint for roasting potatoes: Add some veg broth on the bottom of the pan with the sliced potatoes, cover it with a foil, and bake on 450 until the potatoes are tender, about 30 minutes. When the potatoes are tender, uncover and broil, turning a few times, until they are crispy.

vine and dine - horseradish crusted tofu

Vine and Dine



This week's Vine and Dine by Tami is being reported from a hotel in Maryland! We are on vacation and made the Vine and Dine last week before we left. As vacations tend to be, our leaving was too hectic to do the write up earlier so, we are now wracking our brains to remember what the meal was like and how the wine complemented it.
We'll do our best.

The cookbook chosen this time was the first Horizon book and the recipe out of that was the Horseradish Crusted Tofu with Roasted Red Pepper Sauce. While I believe part of the idea of V&D is to get us to dig out forgotten cookbooks and explore new recipes, this happened to have been one of the only recipes we actually tried and loved. I wonder how many out there who have this book also made this very recipe since it simply sounds great. One thing is for sure, this book doesn't get the attention in our kitchen that it richly deserves. Nice to have dusted it off.

Out of the same cookbook the Spinach with Pine Nuts was recommended; garlic, olive oil, spinach and pine nuts. I'm there. Do not omit the pine nuts from this - it adds so much flavor and texture. You don't even have to add a lot of pine nuts, but don't substitute it since it is so worth it.

The tofu dish we made gluten free. Kate is at least gluten or wheat sensitive, so we subbed Glution Breading Crumbs for the bread crumbs. I also made our own baked tofu by first pressing (Tofu Express) it and then baking it in a chicken-like marinade. My daughter was complaining that tofu tastes like nothing. All this time I thought I had been making tofu well, and then all it takes is a reality check from my eleven-year-old who should be avoiding seitan now. She set me straight and now I am working on getting flavor (more flavor?) into a slab of tofu. I guess I was onto something since she really liked this horseradish tofu - and of course, the recipe from the book didn't hurt either.

As for the V&D itself, the tofu with mashed potatoes, the spinach and the red pepper sauce was phenomenal. Oh, and the wine was darned good as well! I'm going to spoil it for David by saying it first, but it was a delightful screw-top Merlot. But then I'm a sucker for a good red wine anytime. This one made me happy.

FNF - pretzel-fried steak

Food Network Friday!

This month's veganized version for Food Network Friday, brought to you by Tami Noyes, is Aarti Sequeria's Pretzel-Fried Steak. She is the latest Food Network Star who is introducing Indian meals to Food Network's fans, but with a twist. This recipe, however, is not so unusual - it just sounds that way. The only real Indian aspect is the fenugreek in the flour mixture and the mango-chutney gravy. The pretzel is unusual, but not in an Indian way. 

This is a country-fried steak, using ground pretzels as the coating instead of flour. Although I didn't find that the coating made too much difference in the crunch department, it was unique and the family loved it. Of course, the family loves it when I deep fry anything, be it kale or seitan.

Aarti calls for eggs in her recipe. I used to freak out about the coating adhering to the seitan or tofu during frying, but since last year, I have had the honor of frying a bunch of stuff - in fact, more so than I had in all my life total - and I can say with certainty that it is as easy as coating the ingredient in a non-dairy milk, sans eggs. 

In other words: flour, nondairy milk, coating. Simple. No need for anything complicated like flax meal (although it wouldn't hurt health wise!) or fresh cashew milk (as I previously claimed). Coat and let it sit for 15 minutes. Fry. Eat.

The gravy was good, but I was really craving the cream gravy.

I couldn't get away by not making mashed potatoes, but I did wind up making Aarti's side dish of Greens n' Beans, which is a recipe of greens coated with a cilantro pesto. I changed things up a bit by using parsley instead cilantro and substituting Brussels sprouts, green beans and oyster mushrooms for the kale and beans. So, almost everything got swapped.

As for the beef, I used a pressed tofu and a seitan recipe I am experimenting with. I did keep the whole experience gluten free, which is why I also made the tofu. Gluten Free pretzels can taste like twigs or like pretzels. After eating our way through Whole Foods' snack section, the family chose Glutino. This is a delicious, albeit expensive, brand.

magic coconut cookie bars


Another Lit Group, another cookie. My kids are really digging my new found baking enthusiasm! Kate chose the cookie for this meeting and because the book was "The Witch of Blackbird Pond," another very appropriate selection. These are Magic Coconut Cookie Bars. Another one out of VCIYCJ, by Moskowitz and Romero.

This one had to be gluten and nut free as well, so I had to omit the nuts and I used a ginger snap cookie (not graham cracker - didn't find any GF) that was gluten free for the called-for base. If you are making these gluten free, add another 15 minutes to the baking time. And note that there is a setting time - overnight.

I have no real idea why my ten year-old would choose this for her 'cookie' selection since it doesn't look like a cookie - and the other girls actually gazed with skepticizm at the bars. They did turn out really well, though, and they all liked it.

mexican snickerdoodles - gluten free

Not only did I bake cookies that were gluten, nut, dairy and egg free, but I also made them without bean flour! I would love to take the credit, but Vegan Cookies Invade Your Cookie Jar by Moskowitz and Romero beat me to it. They use a combo of coconut flour, white rice flour, millet flour, cornstarch and flax meal to sub for the gluten.

I love it! No bean flour.

I made the Mexican Snickerdoodles out of the book and while they say to sub the GF flour on a one to one ratio, I found that the batter needed a little more. Next time I will try refrigerating the batter for a bit since coconut flour absorbs liquid very well and giving it some time might help.

The cayenne pepper in the batter was a little too much for the kids, though, so if you are planning on making them with kids in mind, skip the cayenne. I had made two batches for my group, in case the pepper was too spicy.

The kids loved them and I had no complaints. I'm loving this book :)

raw mexican cabbage boats

Raw Night

I made a Mexican-style stuffed cabbage boats. I used soaked sunflower seeds, onions and garlic to make the filling. But since I am beginning to see that a lot of raw foods that are trying to imitate other meals are utilizing nuts and seeds, I wanted to add something different. So, I also chopped up fennel, zucchini and summer squash and mixed it with my seed filling. Not so say that nuts and seeds are not good for you, on the contrary, they are immeasurably so, but I am seeing that there is some dependency on them. All things in moderation.

I topped it with a salsa of avocado, spring onion, and yellow and red tomatoes. 

As for the cabbage, I attempted to dehydrate some leaves to see if I could get a crunchy shell. Nope. It turned out brittle and the color was off. I'll try marinating it in some olive oil next time.

The boats were Mexican influenced with the addition of chili powder,  chipotle chili powder and lime zest.

Very filling and delicious! I'm actually looking forward to raw nights. Not only is it easy and quick to make, but it tasted good.

If you make this, though, do not stuff the leaves as much as I did - not enough leaf for the filling.

tom kha

Asian Night

When we have the chance to go to a Thai restaurant, David, Mikel and I always want the Tom Kha soup - a coconut-lime soup. Invariably though, there is either fish sauce in it or it is made with chicken stock. There was a time we received it with a piece of chicken, even after interrogating the server; makes you think they weren't being completely forthright...maybe?

If we are able to find a place that follows our one simple rule of 'no animals in our food,' they charge an arm and a leg for a teeny, tiny bowl. It just makes more sense to make it at home and load it up with all your favorite vegetables, fungi or soy products. 

This soup should really be called Tom Yum, but that is this same soup without the coconut milk - so unfair.

We made ours with shiitake, green beans, red peppers, spinach, carrots, shallots and basil. This is one of those Thai meals, that although would be even better with the addition of kaffir, lemongrass and galanga, tastes spectacular with just lime, lemon zest and ginger. This is so because I've gone to the extent of having gotten those exotic ingredients, but not tonight. Still totally wonderful.

raw collard wraps

Monday Night is Raw Night

It seems my children have gotten used to the idea of Raw Night. I didn't say they've gotten to like it - just that they now remember to moan...'oh, yeah. It's Raw Night,' sigh and walk away.
No matter! Onward we go!

Tonight's culinary delights involved a marinated collard wrap, encasing a puree of fresh-shelled peas and kohlrabi. The puree is mixed with walnut pieces, slivered spinach, bean sprouts and minced Fresno peppers. Accompanying the wraps are a cucumber salad, marinated shiitake and nama shoyu vinaigrette.

I found the meal well-balanced, the flavors, textures and colors all complementing each other. David thought it wasn't bad. Kate liked it. Mikel and Cat humored me tasting the wraps. Mikel told me making raw taste good is hard. After I gave him a Mom-look, he amended that to getting him to like raw is difficult.

When dinner was almost ready, Cat sprang on me that it is her Half-Birthday. Great! So? Well, we have some dear friends who do celebrate all five of their children's half birthdays, and since I was just jumping out of my skin that my daughter was doing math of any kind, I immediately set to work to produce some dessert in celebration. ...a raw dessert.

No fear, blog readers, desserts of any kind - raw or otherwise- are always welcome at our house! Desserts are not collards, after all.

By the way, this pie has three fillings - almond butter, chocolate and vanilla. My blender needed to be cleaned thrice. And the food processor once. This is a gluten free, albeit not soy free dessert - the thickener is soy lecithin.

gluten free and fat free biscuits

Like I said before, my kids simply do not care if they have the same things in a row. Last night we had Seitan and Dumplings (read: biscuits) and today Kate wanted to make Biscuits.

We make a whole wheat biscuit that is fat free. This is probably the fifth time she has made these. The kids love it and I don't cringe when they put Earth Balance on it because I did not add fat to it.

Today I tried my hand at making gluten free biscuits, thanks to Simply Healthy Family blog. It certainly can't hurt to be moderate about wheat - one of the key reasons why we don't eat anything exclusively, like soy. Too much of a good thing is not necessarily a good thing, and all that.

I made them the same way we make the regular biscuits, just replaced the whole wheat pastry flour with GF flour. It needed a half cup more flour than wheat recipe, but I still didn't want to add xanthan gum or fat. Because they were still a little softer than the wheat ones, I baked them in my cast iron biscuit/cornbread pan. I'm sure a little more baking time would be nice, and preheating the pan would be great, too, to get them golden brown. In the end, they are fluffy, held together, are light and tasty. I'm sure adding 2-4 T of fat would make them even better, but like I said, my kids would add it no matter what I did to the batter.
