leek- parsnip soup

We all know of Leek-Potato Soup, but how about using something other than potato? Any white vegetable would be fine here, but I had parsnips delivered in my CSA and that sounded scrumptious to substitute for the potato.

Of course, if you don't mind changing the color of the soup, substitute whatever vegetable you have available; I can't think of anything that would clash with an onion (leek).

The parsnip worked really well with the leeks and the added chives as a garnish gave it a wonderful garlic accent. Very easy, quick and delicious.

persian polenta, parsnip and kale

Whenever I have lots of vegetables in the fridge, or whenever the CSA box looks too inviting to resist, I make '2 veg and a grain.' I try to find a common theme and run with it. Today's was Persian.
I sauteed carrots and parsnips with Turkish apricots - typical of this region is dried fruit in savory dishes. I made creamed kale, not exactly Persian, but I have been craving it. I also made salad with black fig vinagrette, cranberries and shredded carrots. And finlly, I made polenta with fenugreek leaves and seeds and a few strands of saffron. After cooling the polenta I sliced it into rectangles and broiled it. 

There you have a Persian-inspired meal.

3 parsnips and a carrot: $2
apricots and cranberries: $1
polenta: $ .50
3 c rice milk: $1.50
1/2 head romaine lettuce: $1
spices, onion, garlic: $1

root vegetable shepherd's pie with whipped parsnip-potato

European Night

Is it just my kids or do all kids and root vegetables not get along? Is it something in their genes?? Hubby and I thoroughly enjoyed this variation of Shepherd's Pie, with sweet potatoes, adzuki beans, turnips, carrots and peas, but the kids...well, didn't. I bet they will when they get older. I've learned that children actually are very sensitive to certain taste profiles, especially bitter. My job, as I see it, is to keep exposing their juvenile taste buds to different flavors, and let them figure it out later.

Mission accomplished tonight.
